
Cooking is my favorite thing to do a part from being into fashion and so today I want to share this very delicious dinner that I made a couple days ago.
What you’ll need: Pork Chops, Irish Potatoes, Green beans and Asparagus
For the Pork:
- Pork chops (I made 3 servings)
- 1 small or medium sized onion
- 2-3 stalks of scallions
- 3-4 small sprigs of thyme
- 1 1/2 inches of ginger
- 3 cloves of garlic
- 3 tbs oil of your choice
- 1/4 cup of water
Cut and blend these in a blender or food processor. Then pour mixture onto the pork.
Next add to the pork: Dry rub
- 1 ts allspice
- 1 ts garlic powder
- 1 ts onion powder
- 1 ts cayenne pepper
- a pinch of salt and black pepper
- To add a little extra flavor I also added 2 ts of Jamaican Maggie all purpose seasoning.
Rub dry seasoning and marinade into the pork and place into the refrigerator in a covered container for 1-2 hours. This can be left to soak overnight as well. Pre- heat the oven at 375 degrees Fahrenheit.
Place pork onto a foil covered baking tray with some oil to keep them from sticking and cover the tray with more foil. Bake for 15-20 minutes. Then flip the pork and bake for an additional 15 minutes. Take pork out of the oven and drain the juices into a container. Add 2-4 tbs of brown sugar, 4 tbs of ketchup and 3 tbs of soy sauce (adjust measurements to your taste and liking). Mix this and pour half over the pork chops and return them to the oven for 5 minutes, then flip and pour the rest of the sauce. Turn the oven off and let the pork rest in the oven for about 2 minutes.
Garlic Mashed Potatoes: Peel 4 medium/large irish potatoes and dice them. Bring some water to a boil and place potatoes into the water. Cook until soft. Drain potatoes and mash with butter, milk (measurement will be dependent on your liking). Add salt, black pepper, garlic powder and Italian seasoning based on your liking.
Lemon Butter Green Beans an Asparagus: I used a handful of green beans and asparagus (ends cut). Place vegetables into some boiling water and cook for 5- 7 minutes. Drain water and add 1 tbs of butter, 1 ts of lemon juice, a pinch of salt and black pepper. Mix together.

Plate and serve your family this tasty meal. You can use other vegetables if you want. You can also use sweet potatoes instead of white potatoes. Comment below and let me know what you think of this dinner idea. If you try this recipe be sure to let me know. xoxo
